This cake is a perfect mid-week pick-me-up!!
The cake is made from my typical 2eggs-100g-100g-100g victoria sponge recipe.
I used three of my new Wilton 5 Easy Layer cake pans. For a three egg recipe the full 5 pans would be perfect! As the pans are smaller they only need 12-15mins in the oven (see perfect mid-week pick-me-up!)
I used a typical buttercream icing, raspberry jam and fresh raspberries for decoration!
